Radicchio Salad

There's something magical about building a meal around seasonal produce, and this radicchio salad is a perfect example. It's bitter, bright, and crunchy combining fresh ingredients with Our House dressing for a salad that's as beautiful as it is flavorful.

Ingredients

  • 1 head radicchio
  • 1 small fennel bulb
  • 1 blood orange
  • 1/2 cup cashews
  • Fresh dill
  • Flaky salt

Dressing

  • 1 stick pack After Noon Our House dressing blend
  • 5 tbsp olive oil
  • 2 tbsp vinegar

Instructions

  1. Quarter the radicchio, gently pull apart the leaves, and arrange them on a serving plate.
  2. Thinly slice the fennel and scatter over the radicchio.
  3. Cut the blood orange into segments (or small pieces) and scatter on top.
  4. Toast the cashews in a dry pan until golden brown. Let cool and scatter over the salad.
  5. Make the dressing: add olive oil, vinegar, and the Our House stick pack to The Shaker. Shake until fully combined, then drizzle over the salad.
  6. Finish with fresh dill and a generous pinch of flaky salt.
