The Viral Scala Salad...Made Our Way
By now you've probably seen it. The Scala-style chopped salad has been all over your feed — a heap of finely chopped lettuce, crispy meat, salty cheese, and the kind of dressing that makes the whole thing glisten.
But ours has a twist (or two). Homemade pita croutons, blistered in the air fryer with a heavy dusting of za'atar. A handful of pepperoncini, because brine belongs here. And the part that actually makes this salad ours: our lemon dijon vinaigrette that comes together in seconds - just add oil and vinegar to our Our House Dressing Starter.

What you need
- Our House (Lemon Dijon) Starter for homemade-ish dressing
- Olive Oil
- Apple Cider Vinegar
- Chopped lettuce
- Cucumbers
- Green onion
- Parmesan
- Halloumi
- Salami, chopped & air-fried
- Pita, chopped & air-fried with a heavy hand of za'atar
- Greek pepperoncini (non-negotiable)
How to build it
Chop the lettuce, cucumbers, and pepperoncini small — Scala-style.
Crisp the halloumi in a pan until it's golden on both sides (try not to eat it all before it makes it into the bowl).
Chop the pita bread in bits, cover with olive oil, and za'atar seasoning. Throw into the air fryer with the chopped salami and let cook for ~5 min at 375°F (or until crispy).
Throw everything into a bowl and top with grated parmesan and chopped green onions.
Mix together Our House blend with extra virgin olive oil and apple cider vinegar, for a delicious lemon mustardy dressing that brings it all together.
