Shaved Brussels Sprout Salad

This shaved Brussels sprout salad is fresh, festive, and full of flavor, with pomegranate, pistachios, and salty pecorino. The real star is the creamy, tangy dressing made with our Greek Goddess dressing blend mixed with a few spoonfuls of Soom's tahini that ties every bite together!

Ingredients
- 1 lb Brussels sprouts, ends trimmed and thinly shaved (use a mandoline or food processor)
- ½ cup pomegranate arils
- ⅓ cup roasted pistachios, roughly chopped
- ½ cup finely grated pecorino cheese
Dressing
- 1 After Noon Food Greek Goddess stickpack
- 5 tbsp olive oil
- 3 tbsp vinegar (white wine or apple cider)
- 2 tbsp Soom tahini
Instructions
- Add the Greek Goddess stickpack, olive oil, vinegar, and tahini to The Shaker. Shake vigorously until the dressing is smooth and fully combined. Season with salt and pepper to taste.
- Add the shaved Brussels sprouts to a large bowl. Drizzle in about half of the dressing and toss well to evenly coat. Let sit for 5–10 minutes to slightly soften.
- Add the pomegranate arils, chopped pistachios, and grated pecorino. Drizzle over the remaining dressing and toss again until everything is well coated.
- Transfer to a serving bowl or platter. Top with extra pomegranate, pistachios, and a sprinkle of pecorino.
