Smash Cukes

Ingredients

  • 2 large cucumbers (or about 4–5 Persian cucumbers), sliced in chunks
  • 2 Tbsp extra virgin olive oil
  • ½ cup Greek yogurt (plain, full-fat or lower fat, whichever you prefer)
  • 1 stickpack (or about 1½–2 tsp) Greek Goddess dried dressing blend
  • Fresh parsley, finely chopped (about 2 Tbsp)
  • Salt and pepper
  • Lemon wedge (optional)
  • Sesame seed blend: 1 Tbsp white sesame seeds (toasted if you like), and optionally a small amount of black sesame for visual contrast

Dressing

  • In a small bowl, combine the Greek yogurt and olive oil.
  • Add the Greek Goddess seasoning blend. Stir until smooth. If you like a thinner dressing, you can whisk in a teaspoon or two of water, vinegar, or lemon juice until it reaches your preferred consistency.

Directions

  1. Wash the cucumbers and slice them thinly (e.g. rounds or half-moons). If the cucumbers are very watery, you can lightly salt them, let them sit for 10 minutes, then drain excess liquid.
  2. Place the cucumber slices in a salad bowl. Pour the dressing over the cucumbers. Toss gently so all slices are coated. Taste and adjust: add more salt, pepper, or a squeeze of lemon if desired.
  3. Sprinkle the chopped parsley over the top. Then sprinkle the sesame seed blend.

Serving Suggestions

Best served chilled. Let it sit 10–15 minutes in the fridge to allow flavors to meld.

Pairs well with grilled meats, as a side for Mediterranean meals, or alongside pita and hummus.
